Quick Pickled Onions

Pickled Onion Recipe

Ingredients:
1 red onion
2 cups white vinegar
1 tablespoon salt
1 tsp - 1 tbsp sugar

Directions:

  1. Pour vinegar and salt into a small pot. Heat on high heat. Let simmer until salt is dissolved. If you would like a bit of sweetness add 1 tsp - 1 tbsp sugar.
  2. While vinegar is heating, cut onion into strips then stuff into a 16 oz wide mouth mason jar.
  3. Once the salt has dissolved, pour hot vinegar over the onions until completely covered. Screw on the lid and place in the refrigerator. When the onions turn a fabulous pink color they are ready to enjoy, usually a few hours or overnight.
